Pink Dragon

1 cup diced red dragon fruit (fresh or frozen/thawed)

double shot vodka

1 cup soda water

sugar and water for rimming the glasses

blackberries

mint

lime wheels

Prep the stemless champagne glasses with water or simple syrup on the rim.

Add the dragon fruit to the bar mixing cup. Muddle it until it is mashed very well. Add vodka, ice, and a splash of soda. Shake well.

Pour the soda water into the glasses. Add the cocktail. Garnish with a lime wheel, blackberry, and sprig of mint. Enjoy!

Dragon fruit is gorgeous, and we used iridescent stemless glasses to make the presentation pop. It is a little early in the farmer’s market season to think about fresh fruit, so the frozen red dragon fruit was a delicious stand-in. What to do with the leftovers? Use them on a salad!
