Bear Paw Cookies With A Special Gift

My son gifted me a gorgeous “Evergreen” KitchenAid Mixer for Christmas. So, I decided to make his favorite cookies and photograph it. It replaces a machine I have had forever that made all his childhood pizzas, cookies, and cakes. I love my KitchenAid mixer!

Bearpaw Cookies

Ingredients:

  • 1 cup unsalted butter, room temperature

  • pinch sea salt

  • 1-1/2 tsp baking soda

  • 1 cup sugar

  • 1 cup brown sugar

  • 2 eggs, room temperature

  • 2 cups plus two tablespoons all-purpose flour

  • 1 cup baking cocoa (Hershey’s)

  • 2 tablespoons cold brew coffee

  • 1 bag semi-sweet chocolate chips

Method:

  1. Cream the butter, sugar, salt, and baking soda together, scraping the bowl, and mixing until fluffy using the paddle.

  2. Add the eggs one by one, mixing smooth between each addition. Add the flour, cocoa, and coffee and mix smooth.

  3. Fold in the chocolate chips mixing just til they are incorporated.

  4. Make the peanut butter cookies then shape like bear claws as pictured, using cashews for the claws. Bake for 20 minutes at 325 for the large ones or 12 minutes for the small ones.

Ingredients

  • 1/2 cup unsalted butter, room temperature

  • 1/2 cup brown sugar

  • 1/4 cup granulated sugar

  • 1/2 teaspoon baking soda

  • 1/4 teaspoon salt

  • 1 large egg

  • 3/4 cup creamy peanut butter

  • 1 teaspoon pure vanilla extract

  • 1 1/4 cups all-purpose flour

Method:

Cream the butter, sugar, baking soda and salt together. Add the egg and mix smooth. Add the peanutbutter and vanilla and mix smooth. Add the flour, scrape the bowl, and mix to incorporate. Use for the toes and pads of the bearclaws.
